There are so many but I'm going to have to say Apu. Favourite quote (where Homer ruins Apu's sand castle): "Oh dear, you've ruined my work! You flying fat man!"
I'd have to say either Lionel Hutz, RIP, or Dr. Nick. Lionel Hutz had some of the best lines in the earlier seasons, and the episode where Dr. Nick helped Homer become obese was awesome.

Seeing as I can count the number of "Simpsons" episodes I've watched on one hand...I'd have to go for Maggie.

Mayor Quimby can be humurous for all teh wrong reasons. But any Sideshow Bob episode is an episode to stop and watch, or at least Tivo
